Calcium Stearoyl Lactylate is an ionic powder or flake-shaped solid emulsifier with an HLB value of 6.7. CSL E482 emulsifier can be dispersed in hot water and soluble in hot oils and fats. Calcium Stearoyl 2 Lactylate can be used for emulsification, aging resistance, gluten fortifier, and fresh-keeping in flour products such as bread, steamed bread, noodles, instant noodles, and dumplings. CSL in food can improve texture, increase shelf life, and enhance the overall quality of these products.
